Chili con adzuki czyli fasolka adzuki z kukurydzą, zieloną i czerwoną soczewicą w ostrym sosie pomidorowy. Aby przygotować to danie musisz wcześniej namoczyć fasolkę. Najlepiej zabrać się za to dzień wcześniej i odstawić ją na całą noc do namoczenia. Danie można podawać z ryżem lub quinoa, a dodatek świeżej kolendry idealnie dopełnia smak potrawy.
Składniki & przygotowanie
Do przygotowania 6-8 porcji potrzebujesz:
- 2 puszki pomidorów
- cebula
- marchew
- 1 ząbek czosnku
- ½ fasolki adzuki
- ½ szklanki suchej zielonej soczewicy
- ½ szklanki suchej czerwonej soczewicy
- 140 g kukurydzy z puszki
- olej do smażenia
- ½ łyżeczki papryki ostrej
- 1 łyżeczka papryki słodkiej
- 1 łyżeczka oregano
- ½ łyżeczki kuminu
- 1 łyżeczka tymianku
- 1/3 łyżeczki cynamonu
- 1/3 łyżeczki mielonej kolendry
- około ½ łyżeczki pieprzu
- sól do smaku
- doniczka kolendry
Przygotowanie:
- Fasolkę zalać wodą i odstawić na noc.
- Soczewicę i fasolkę przepłukać dokładnie pod zimną, bieżącą wodą.
– Fasolkę wsypać do garnka i zalać 1 i ½ szklanki wody. Gotować na małym ogniu pod przykryciem około 20-25 minut do miękkości. Odcedzić.
– Soczewicę zieloną wsypać do garnka i zalać 2/3 szklanki wody. Gotować na małym ogniu 15 minut pod przykryciem, następnie wyłączyć kuchenkę i zostawić na 10 minut. Odcedzić.
– Soczewicę czerwoną wsypać do garnka i zalać 2/3 szklanki wody. Gotować na małym ogniu 10 minut pod przykryciem, następnie wyłączyć kuchenkę i zostawić na 15 minut. Odcedzić.
- Pomidory z puszki zblendować.
- Cebulę i marchew pokroić w kostkę. Podsmażyć 3 minuty na patelni. Zalać sosem pomidorowym i gotować 10 minut. W tym czasie dodać czosnek przeciśnięty przez praskę i przyprawy.
- Przelać do głębokiego garnka i dodać soczewicę, fasolkę i kukurydzę. Gotować na małym ogniu po przykryciem około 20 – 30 minut.
- Kolendrę umyć i osuszyć. Łodygi oddzielić od liści, posiekać je i dodać do gotującego sosu. Doprawić solą i pieprzem. Liście również posiekać i zostawić do wykończenia dania.
- Podawać z ryżem lub quinoa, posypane świeżą kolendrą.
