Składniki & przygotowanie
Do zrobienia trzech porcji risotto potrzebujesz:
- 300 g ryżu arborio
- 2 szalotki
- 300 g kurek
- 150 ml wytrawnego białego wina
- około 600 ml wegańskiego bulionu
- 5 łyżek oliwy
- 1 łyżka masła wegańskiego
- natka pietruszki
- szczypior
- sól
- pieprz
Przygotowanie :
-
- Kurki wypłukać we wodzie, wyczyścić i osuszyć. Szalotki obrać i pokroić w drobną kostkę. Podzielić na dwie części.
- Do garnka z szerokim dnem wlać 3 łyżki oliwy i rozgrzać. Dodać połowę posiekanej szalotki i chwilę smażyć. Następnie dodać ryż i wymieszać, aż ziarenka pokryją się oliwą. Wlać wino i zredukować płyn.
- Do garnka wlać chochelkę bulionu i wymieszać. Kiedy ryż wchłonie płyn ponownie wlać niewielką ilość bulionu, czynność powtarzać do czasu, aż ryż będzie miękki (około 15 minut).
- W międzyczasie na patelni rozgrzać dwie łyżki oliwy, dodać resztę szalotki i chwilę podsmażyć. Następnie dodać kurki, przyprawić solą i pieprzem i smażyć na wysokim ogniu, aż cała woda wyparuje. Odstawić.
- Pod koniec gotowania ryżu, na ostatnie 3 minuty dorzucić kurki. Wymieszać i doprawić do smaku. Zdjąć z ognia, dodać łyżkę masła i wymieszać.
- Podawać posypane posiekaną pietruszką i szczypiorkiem.
