U mnie w domu z okazji Wielkanocy co roku gotujemy żurek. Dopiero kiedy przeszłam na bezglutenową dietę robimy samodzielnie zakwas. Wcześniej kupowaliśmy gotowy i może dla tego nigdy nie lubiłam żurku 😛 Zupę gotuję na bazie zakwasu ryżowego, który trzeba przygotować kilka dni wcześniej. Przepis na ten zakwas jest na moim blogu. Żurek wychodzi delikatny i nie potrzeba do niego dodawać śmietany. Jeśli preferujesz bardziej tradycyjny polecam dodać śmietanę sojową lub ryżową, możesz też użyć zwykłą 30 %. Smak zupy wzbogaci dobrej jakości biała kiełbasa i wędzony boczek.
Składniki & przygotowanie
Do przygotowania dwóch litrów żurku będziesz potrzebować
- 500 g białej kiełbasy
- 100 g wędzonego boczku
- około 300 ml bezglutenowego zakwasu na żurek
- 2l bulionu warzywnego
- 0,5 kg ziemniaków
- 1 cebula
- 1 łyżka majeranku
- ząbek czosnku
- 1 łyżeczka startego chrzanu
- sól
- pieprz
opcjonalnie:
- śmietanka sojowa/ ryżowa
Przygotowanie:
- Ziemniaki, boczek i cebulę pokroić w kostkę. Rozgrzać patelnie, wrzucić boczek i chwilę smażyć. Kiedy tłuszcz zacznie się wytapiać dodać cebulę. Usmażyć na lekko złoty kolor.
- Bulion zagotować, dodać boczek z cebulą i ziemniaki. Kiełbasę nakłuć w kilku miejscach i dodać do bulionu. Gotować na małym ogniu, aż ziemniaki zmiękną (około 15 minut).
- Zdjąć z ognia i wyjąć kiełbasę. Pokroić ją w plastry.
- Do bulionu dodać kiełbasę i zakwas. Dodawaj go stopniowo do smaku. Zagotować.
- Przyprawić solą, pieprzem, czosnkiem, chrzanem i majerankiem.
- Żurek możesz dodatkowo zabielić śmietaną (porady).

Przepis przygotowałam na bazie ryżowego zakwasu, który znajdziesz na moim blogu.
Ilość zakwasu w żurku zależy od Ciebie.
Ziemniaki muszą być ugotowane zanim dolejesz zakwas.
Do żurku możesz dodać śmietanę. Najlepiej użyć sojową lub ryżową. Wlej do szklanki odrobinę zupy, a następnie dodaj śmietanę. Wymieszaj i wlej do zupy.
